Caveat: although I am not a scholar of Arabic or less even of Iraqi the name Tepsi Beitinijan sounds more Armenian or Farsi to my ear. I know that it is a Mesa dish like Hummus, but always think of Baba Ganoush term for eggplant... Any idea(s) comment(s)?
